Two Unique Ingredients I’ve tried in Cookies that were Amazing:

Tahini
I once had a chocolate chip cookie that was baked with tahini. Yes, the same stuff that goes into that falafel sauce! The tahini gives the cookies a richness similar to peanut butter cookies, and they’re super delicious.

Miso
Miso is not only delicious in your favorite Japanese soup, but it makes for one tasty chocolate chip cookie. I could not believe how tasty a cookie with chocolate chips and miso could be!

Potato chips

One of my favorite and totally unexpected unique ingredients for baking cookies, is potato chips. Classic, rippled, or kettle-cooked, they all provide a different element to nearly any type of cookie dough. I love the flavors of sweet and [salty], so my favorite are chocolate chip cookies rolled in crunched ripple chips. You’d think they would be crispy, but in fact, make the cookie a little chewy.

I use unique ingredients when baking cookies all the time. I use ingredients like applesauce, ripe bananas, chia, or flax seeds for egg replacements. Aquafaba, the liquid from a can of chickpeas, makes great meringue cookies. I also substitute plant-based butter or coconut oil for butter.

I have “veganized” chocolate chip cookies and created what I think is the best chocolate chip cookie. It is dairy-free and has no cholesterol.
